Peanut Butter Brownies!

My mum had one of her friends and her kids over for dinner tonight so she asked me to make dessert. Specifically, peanut butter swirl brownies. I've made them quite a few times before and they are just so yummy. So filling but so yummy. It's an Ina Garten recipe and I first saw it watching her show Barefoot Contessa and knew that I just had to make them. And what a great decision that was. 


 So these were the different stages of the brownie making process. First of all you had to melt chocolate, chocolate chips and butter in a bowl over simmering water until it was all melted chocolate goodness....


There is actually another step in between this step and the dry ingredients step, where you combine eggs, sugar, coffee granules and vanilla extract and then pour the melted chocolate mixture into that bowl but I forgot to take a picture of that... oops!
 Third step is to combine all the dry ingredients together (flour, baking powder and salt) as well as the rest of the chocolate chips. You mix the chocolate chips in with the flour instead of putting them into the batter afterwards because mixing them with the flour ensures that they don't sink to the bottom of the batter and then get stuck to the bottom of your baking tray... handy tip for you there! You then mix the dry ingredients and the chocolate chips into the chocolate and coffee/eggs/sugar/vanilla mixture.
Pour it all into a buttered and floured baking tray and then scoop some peanut butter onto it. You use a knife to swirl the peanut butter throughout the brownie batter until you end up with your final product (pre-baking).... as seen below! Doesn't it look yummy....


I think these are actually my favourite brownies that I've ever had. They are so filling though. I always half the amount of ingredients that the recipe calls for otherwise you end up with a huge amount of brownies that no one in their right mind would be able to finish!
